What fresh milk really is
Fresh milk is usually pasteurised at a much gentler heat, around 72 to 75 degrees Celsius for a short time, enough to make it safe while keeping the flavour close to raw. Because that gentler process does not sterilise the milk completely, fresh milk must stay chilled and be used within a few days. In return, you get a cleaner, more natural taste and a shorter journey from farm to fridge.
The real trade-off, point by point

- Shelf life: UHT wins easily, lasting months unopened versus days for fresh.
- Taste: Fresh usually wins. UHT's intense heat can leave a faint cooked or slightly sweet note that sensitive palates notice.
